The Kentucky Wildcats won their 8th NCAA championship last night. w00t!!!!

In other news...

Tax season is almost over. Hooray! I love being a SAH/WAHM (math tutoring) and I'm looking forward to that role again.

Just came home from the farmer's market with 1/2 bushel of sweet Georgia peaches! mmmmm.... About to start making jam and putting it in jars for the winter. Love it!

I want to share this recipe with you. I've made 2 batches for teachers, neighbors, and friends for Christmas - it's a hit! I pulled it from The Farmer's Almanac calendar, Faye Burleson's recipe.

2 jars (16 oz) dry roasted peanuts
1 bar German sweet chocolate
1 (12 oz) milk chocolate morsels
1 1/2 bars of almond white chocolate (the entire package and half of another)

Place in crockpot as listed. Cook on low for two hours. Do not open lid - very important. After two hours, stir very well. Place mixture by tablespoons on was paper. Let sit until firm.

Very easy and Yummy! Enjoy and Merry Christmas.

...and I'm torn about it, but we've got to eat!

I've applied to be a high school math teacher. The schools open for this position today are two: one down the road and one on the other side of town. The one down the road is not very good, and the one across town I used to substitute for and am not impressed with, either (honestly, there's going to be discipline problems everywhere). So I think I'll take the one down the road (of course, if they want me. That isn't a guarantee, but the odds are good). I love math and love to teach it, but I wonder what % of time I'll be dealing with discipline.

One *HUGE* sigh..... AHHHHHHHHHHHHHHHHHHHHHHHHHHHHHHHHHHHHHH

Made Apple Butter & Canned it... Yum!

Got 40# of apples for $12, so I made some apple butter and canned it. Yum! I will also be making/canning apple sauce. I tried apple jelly but it just would not set so we're using it as apple syrup for pancakes.

In lieu of our current job situation, I will be making homemade goodies for Christmas. Honestly, I prefer that anyway, as it seems more Christmas-y to me than buying gifts. Though I do like buying gifts, too Wink

I picked about 7 today as well as a few peppers. Weird... it was close to freezing last night.

Canned Chicken Today

I am so proud. My beautiful quarts of boneless, skinless chicken breast (all 14 of them, approx. 28 pounds) make me smile. Rest went in the freezer.

PS - I bought a 40 pound box for $50 ($1.25/pound). Check your area for restaurant suppliers. That's where I got mine.

Wow... I haven't blogged in a long time.

We purchased a new-to-us van. We didn't want to but the old van had an electronic issue that we just could not find (things shorting out, repeatedly killing the battery). Then the transmission went out. We crossed the line of dealing with it and bought a used Toyota. I'm excited and nervous... we haven't had a car payment in almost all of the 8 years we've been married. Not liking that part, but enjoying the non-worry of whether or not I'll get stranded with 4 little kids on the road.

Have been doing minor, minor remodeling. The kitchen has been painted (cabinets included). Parents visit next week so Dad and I will demo a wall and put new countertops on. Possibly new flooring if the discount home improvement store has what I'm looking for (Contractor's Best is usually 1/2 price of the other guys, but it is like Big Lot's in that their inventory is never the same week to week).

Loving the cooler weather! I'm so ready for the fall to get here (not just on the calendar, but tangible fall). Florida usually doesn't see that for a little while longer, but we've been having bouts of cooler weather. Very enjoyable.

Return and Report: Yard Sale Results

I made $97. The leftovers will go to my friend's yard sale in a couple of weeks. The leftovers from that will be donated. Not too shabby. I'm definitely happy with the results.

CLUE Report - get it free

Clark Howard talked about this yesterday, so I thought I'd add the link:

A CLUE report is how the insurance company keeps tabs on you, similar to a credit report for insurance. It has info about claims, etc on your Homeowner's Insurance and on your Auto Insurance. Clark suggested that you ask for one from the seller before you buy a house, and check it free once a year to see if there are any mistakes on your report. You can dispute/correct information on it.

Oh, and if you have any tips on holding a sale, please let me know. I'm thinking advertising with signs at all major intersections in a mile radius, Craigslist, online paper ad (that's free).

Tree work for cheap!

Our friend is an arborist and owns his own tree service. He has agreed to lend us his climber all day tomorrow for only $200! We are going to get better than $1000 worth of work done for 1/5 the price. Imagine my glee Smile

Cleaned the pantry

I'm so happy that we've been able to accumulate some food storage. I'm also glad that my local Wal-Mart (you know, the one I usually loathe), sometimes clearances food and I stock up on it if I use it (for instance, I got cans of 100% pure pumpkin for $0.25 each!). We also got some free Nutrisystem products from a friend. I don't know exactly how long it will last us. I should run a food storage calculator and see. Anyway, I just wanted to take a pic.

... apparently not everyone just throws their discards away. In fact, the big box home improvement stores return it somewhere for a credit (long story, but it ended in my husband high-tailing it out of there because an associate was writing his license plate # down). So, I would advise doing a thorough investigation before you become a landscape freegan.

Free landscaping

Ah, DH! He's really into landscaping our home and so he frequents big box home improvement stores and other stores with garden centers. Well, he frequents their racks out by the trash and I cannot tell you how many $'s worth of plants he's salvaged (they throw away things that may be on their last leg, but not dead!) Our home looks better than ever thanks to his efforts.
